It’s summer time in DC, and the farmer’s markets are banging. We were reminded while on our recent France trip that gazpacho = summer. So I made some.
Just go to this link and watch Jose Andres make his gazpacho, from his wife Tichi’s recipe. He says it is the best, and I think he might be right! The recipe is so easy and I would just copy his, so watch and learn: https://www.instagram.com/reel/Cx308FsxIn7/
I pulled the recipe from the NEW cookbook you can see in the first photo (credits for photos: my delightful husband Chris, whose pictures are universally better than mine), Spain My Way. It is a really excellent cookbook, building on Jose Andres’ older books.
You want to have this gazpacho. It’s cool, creamy, a little sweet and a little sharp. Perfect for a summer lunch — and it takes less time to make than a sandwich!
