Cold nights call out for a stew. So we had Guinness stew with Irish soda bread. Nostalgic for me — so many cold fall nights as a kid, something like this would be a welcome, warming, and fun dinner.
The stew is pretty simple — beef, potatoes, carrots, onions, and peas braised in a rich blend of beef broth and Guinness. Cooks for an hour and you are in business.
The soda bread is very quick to put together and it is a lovely accompaniment to the stew. We ate the whole pot, and I had bread for toast for a few days. Toast being my all-time favorite breakfast, so this was great. We didn’t eat soda bread when I was a kid — we ate the black bread in the can that most New Englanders likely remember. I like the soda bread and am happy it is now part of my kit….
