Make some pimento cheese

I took a while to like pimento cheese. Once I learned how to make my own, using only a little mayo, I found my love for this appetizer, sandwich spread, or all-around tasty treat…..

Ingredients

  • 3/4 Lb. extra sharp cheddar cheese, hand grated

  • 2/4 Lb. White cheddar, hand grated

  • 2 red peppers, roasted, peeled and seeded, then chopped fine

  • 1 Tbsp. Dijon mustard

  • 1/2 cup Duke’s mayonnaise

  • 1 Tbsp. smoked paprika (Pimenton)

  • 1/2 to 1 tsp. cayenned pepper

  • 1 Tbsp. kosher salt

Directions

  • in a big bowl, combine the ingredients.
  • Transfer to serving dishes/ ramekins/ bowls, cover with plastic wrap, and refrigerate for 1-2 hours.
  • Serve with good crackers, crudité, or little toasts.
